Nick Wood and his niece, Erika Mullahey, have always been passionate about tacos. Recognizing that the tri-state was flooded with quality Mexican restaurants and street taco trucks, they wanted to offer something different, something more “innovative.”
So, last month, they launched Woodside Taco Fusion, offering a unique twist on what’s become one of the country’s favorite comfort foods. From a Nashville hot chicken taco to a BLT and everything in between, Woodside isn’t holding back when it comes to flavor.
The trailer has predominantly operated in Muhlenberg County but will debut in Owensboro tonight at Friday After 5.
The ordering process is simple. First, customers select a flavor from Bang Bang Shrimp, the BLT, Gary’s Chipotle Chicken, the Greecian, and sweet taters with black beans. Next, they identify a conveyor, which can be a taco, quesadilla, or burrito. Customers can add rice or bacon-fried elote to their plates, and select a drink to round out the meal.

“I’ve always loved Fusion Tacos, so we used it as a model,” Wood said. “I loved the idea and concept behind it, so we took that and rolled it into this food truck idea. Several folks around here have never seen fusion anything.”
Fusion is a style of cooking that combines culinary traditions from different regions and cultures to create unique flavor combinations and, in this case, tacos.
“We’ve been well-received so far – way better than I thought,” Wood said. “I didn’t know if it would be a hit or if people would look at us sideways because of the concept. We’ve had a lot of positive feedback and several different groups reaching out.”
Wood said he looks forward to venturing to Owensboro for various events and festivals. He added that he’s also open to setting up at local businesses for lunch.
“We’ve only been open for a month, and we’ve been primarily staying in western Kentucky, but we want to extend our circle and reach,” he said.
Wood previously ran a barbecue catering business with his brother-in-law on the side for several years.
“I’ve always been a foodie,” Wood said. “I followed that passion and found joy in cooking food for others. This has worked out well. We like to keep the vibe light and enjoy ourselves while working on our trailer.”
