Hello Pop went from a dream to a reality for owner Chelsea Boling in 2020, and the business has continued to grow ever since — from a cart to a food truck to a storefront coming soon. This summer, they started selling at the Owensboro Regional Farmers’ Market.
“I think our products go well with the purpose of more natural living,” Boling said. “With our products being made from fresh fruit, they go well with the environment here.”
Not only are their pops and shake-ups made with fresh fruit, they are also made with no added color or preservatives, making them that much more appealing to customers.
Boling explained that dietary concerns shared with her by parents about their kids, or even themselves, was the driving inspiration in making their products.
To keep with their “pop” theme, Hello Pop added gourmet popcorn to their menu last year with plenty of unique flavors — including cajun, pickle, cookies and cream, and more.
One of Boling’s favorite aspects of selling at the market is the relationships she builds with customers as they continue to buy her products.
“I love the repeat customers that we see every week,” Boling said. “I almost start to remember their orders and when they come up I get to chat with them.”
As much as she enjoys returning customers, Boling said there is something special about seeing someone try her products for the first time and hearing their reactions.
“We just had a lady come up to us and tell us the strawberry lemonade was the best thing she’d ever had and that it reminded her of her grandma’s strawberry jam,” Boling said. “It’s really hard sometimes because we get so busy, but that makes it really worth it.”
