Molly Higgins started experimenting with baking cookies not too long ago. Now she is running her own business after she found a niche with her stuffed cookies. Filled with “mix-ins,” these cookies are not your average bakery item.
“I’ve always liked to bake,” 25-year-old Higgins said. “I would find cookies online from other places and I thought I could do it myself, and I could come up with my own creation. One day it just kind of stuck, and I got my recipes right.”
Higgins said since she created her cookie business “Molly’s Mixins” about two months ago, she has been spending up to 13 hours a day baking hundreds of cookies in her apartment trying to keep up with orders.
“I was doing about 50 cookies the first time I ever took any orders, now I’m a little over 400,” Higgins said.
She said she never expected business to pick up so soon, or that her cookies would become so popular. She is hoping to buy some better equipment soon to keep up with the demand.
Each cookie weighs 6-8 ounces. The most popular kind has been cookies and cream as well as chocolate chip, but others like strawberry milkshake has also been a hit.
“There are a lot more flavors I have in my brain that I would love to pick if I could find the time for it,” she said with a chuckle. “I’ve just been doing what I need to do to get everybody cookies and I haven’t really stopped to think what I’m actually doing.”
Higgins said she has always dreamt about owning a bakery one day, but she thought it would only happen after she retired from whatever her 9-to-5 job would be. She said now it looks like she’s a lot closer to her dream.
“I feel really grateful that people trust me and the believed that I can deliver a product,” Higgins said. “It’s been great.”
