Owensboro is now home to another food truck offering authentic scratch-made Mexican cuisine. Owned and operated by Orlin Melgar and Lopez Hernandez Yoan, Mi Cocinita started dishing out its first meals Monday.

The food truck had its grand opening at 3511 Frederica Street on Monday. They plan to be in the same spot today. The kitchen operates from 10:30 a.m. to 10:30 p.m. daily, and Melgar said the best way to keep up with their location is on their Facebook page here

The truck boasts many meat options for tacos, tortas, quesadillas, and burritos. They also offer tamales and quesabirrias, a unique take on quesadillas with slow-cooked beef and consome for dipping.

“Everything is homemade, even the seasoning,” Yoan said. “We make our carne asada on the grill with charcoal and then chop it up and heat it up again for the dishes.”

Mi Cocinita offers scratch-made horchata and an assortment of ethnic sodas. They also offer a kids’ menu.

“Come and try the food – it’s delicious,” Melgar said. “You will not be disappointed.”

Yoan is originally from Mexico and spent more than a decade cooking in the kitchen at the local Cheddar’s Scratch Grill. Melgar is a native of Honduras.
